I have a lot of apps connected to one Google account – I have realised that when I upload a video to the Drive folder, a lot of screens are showing the Google login modal so its signing out – is there anything I can do to resolve this?

If google are logging out your devices you need to contact them for support. I can guess, and its only a guess, that they have decide the activity is “suspicious”. If google are not able to resolve the issue then I recommend changing to another cloud platform. Video Kiosk has builtin support for Nextcloud, but you can use any cloud service if you install another App (like Autosync Dropbox) to download / mirror the folder to your device.
